You Ji Dong Ding Jin Xuan Wulong Cha (Organic Dong Ding Jin Xuan Oolong Tea)

Jin Xuan is the common name for TRES 12, a hybrid tea plant developed in Taiwan. It is the cultivar that produces the noted Taiwan “milk tea.” This example is from Andy Chen’s organic tea garden in the Dong Ding Mountain region. The garden is nestled away in a secluded area where the tea plants are protected from commercial chemicals used in other gardens. This tea has a medium sized rolled leaf and a deep jade colored brewed leaf. On the nose there are notes of rhubarb and celery with hints of warm caramel. In the mouth the tea is is gentle with a buttery toast character and a reprise of the caramel. The finish is round and smooth.

Use between 3-5 grams of tea, about a heaping teaspoon. Pour water at 195°F (90° C) over the leaves and steep for approximately 90 seconds. Always remember to adjust steeping time depending on water temperature, amount of tea you have and personal flavor preference. Increase time and temperature slightly with each infusion.
