This classic roasted Dong Ding Oolong from Chen Fang Yan displays all the skill of Taiwanese tea makers. Mr. Chen’s Dong Ding Roasted balances the nutty roasted aromatics with the robust flavors of toasted almonds and the floral aftertastes with hints of dried apricot. A complex tea with so much going on that you just can’t help but take another sip just so you can taste everything. This tea yields multiple infusions.

Use between 3-5 grams of tea, about a heaping teaspoon. Pour 195°F (90° C) water over the leaves and steep for 2 minutes. Always remember to adjust steeping time depending on water temperature, amount of tea you have and personal flavor preference. Increase time and temperature slightly with each infusion
